Since I made these today and they are delicious, I thought I'd give everybody the recipe.
Pecan Shortbread (kinda like Pecan Sandies)
3/4 lb. (3 sticks) unsalted butter at room temp.* 1 cup sugar 1 1/2 cups small-diced pecans 1 tsp. pure vanilla extract 1 tsp. almond extract 3 1/2 cups all-purpose flour 1/4 tsp. salt*
In the bowl of an electric mixer fitted w/paddle attachment (I did this by hand and still got excellent results), mix together butter and sugar until just combined. Add vanilla and almond extracts. In a med. bowl, sift together the flour and salt, then add them to the butter/sugar mixture. Add the pecans and mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 min. Preheat oven to 350F. Roll the dough 1/2 in. thick and cut into 2 1/2 in. squares (I just used a biscuit cutter) with a plain or fitted cutter. Place cookies on ungreased baking sheet. Bake for 20 to 25 min., until the edges begin to brown. Allow to cool to room temp. and serve.
*Since I only had salted butter, I left the 1/4 tsp. salt out---they turned out fine.

ooo I love shortbread. I'll make a mental note to make those the next time I bake something.
